In 2019 while visiting a Cacao farm in Honduras, we learned that cinnamon was growing along with the cacao as an intercrop. After literally being chased by wild geese, we came to a building where the farmer called us over to look at some freshly cut branches. He deftly carved some bark off with a knife and offered us some while proudly saying that there is no cinnamon better than the Honduran cinnamon. One taste proved him correct as the flavors and aromas filled us with the most elegant and sophisticated complexity we’ve ever found in cinnamon.

This was the beginning of a project to use the spices already growing in the balanced agroforestry systems as a way to increase farmer income. After two hurricanes and one Pandemic along with multiple conversations this turned out to not be a wild goose chase after all and several bags of this delicious fragrant Honduran cinnamon arrived at our house along with a delivery of the new harvest of cacao.
